VEGETARIAN PASTA
Serving size: approx. 2
Time in total to make: approx. 20-25 minutes

Ingredients-
1/4 a box of spaghetti noodles
1/4-1/2 cup mozzarella, cubed
1 tbsp. parmasean cheese (or to preference)
1/4 cup basil, finely chopped
1/2 fresh tomato, chopped and seeded
1 tsp. (for boiling water)
1 tbsp. olive oil (later for dish)
Salt and pepper to taste
2 tsp. Italian seasoning (or to taste)

1. Start by boiling a medium pot filled with cold water (but make sure to leave a few inches at the top so it doesn’t over flow!). Add a dash of salt and 1 tsp. or olive oil and let it go on high tempt until it boils.

2. Prepare your tomato, mozz cheese, and fresh herb (the basil). Set aside, in the fridge preferably.

3. After water has boiled, dump in your noodles and cook according to pkg directions.

4. After your noodles are done, drain and right away add your 1 tbsp. olive oil, cheeses, dried and fresh herbs, and tomato. add salt and pepper if desired. Serve warm and enjoy!

CHICKEN CHILI
Serving size: a whole army (lol well a whole army of 6 crazy kids and 2 adults – so serving size 8 plus leftovers)
Time to make: approx. 1 hour

Ingredients-
1 tbsp. olive oil
1 medium onion, chopped
Half a jalapeno, chopped
1 cup (or your preference) cilantro, chopped
1 small can of green chilies
1 can of Rotel (#notsponsored) tomatoes (or a small can of diced tomatoes)
1 quart chicken broth
4 15 oz cans of assorted beans (I used 1 pinto, 1 black, 1 garbanzo,
and 1 kidney)
4 chicken breasts

GARBANZO BEAN CHOCOLATE BROWNIES

Serving size: approx. 15

Total time to make: approx. 45 minutes – 1 hour

Ingredients-
1 cup garbanzo beans
1/2 cup chocolate chips
1/4 cup white sugar
1 egg
1 tsp. vanilla extract

What Does “GemzMyLens” mean? “GemzMyLens” is sort of my way of saying “Jazzing Up My Camera”. You see, “Gemz” is like “sparkling” or “jazzing up” and also is one of my nicknames. “My” is well…. just my. “Lens” means the “camera” or “camera lens” so when you put all that together, “Sparkling Up My Camera” or “GemzMyLens”! Hopefully that cleared it up for ya!
